COOKING WITH YOUR VIDA SANA® COOKWARE BEFORE FIRST USE Wash your Vida Sana® Cookware before cooking with it for the first time. To wash your new cookware, fill sink with hot soapy water and add 1⁄2 cup of white vinegar. Wash with a soft sponge, rinse and dry. This removes any manufacturing oils or polishing compounds that may still be on your cookware. If not removed before cooking for the first time, these may permanently stain or discolor your cookware. It’s always important to select a burner that’s the same size or SMALLER than the diameter of the base of your pan. If using a gas stove, the flame should not extend over the sides of the pan. Vida Sana® Cookware can be used on electric, gas, ceramic or induction cooktops and is oven safe up to 350°F with lids, and up to 450°F without lids. The cookware is broiler safe without lids. You do not need liquids to cook meats using the greaseless method. Preheat your empty Vida Sana® Cookware over medium-high heat for 3-5 minutes without lid. Add a few droplets of water to test if it’s ready for food. If the water sizzles and evaporates, allow the cookware to heat a little longer. If the water beads dance across the surface, then it is ready for food. Add meat. No oils or fats are needed. Reduce to medium heat and sear one side for 4-5 minutes. Use tongs or spatula to turn. Foods should easily release from pan. If there is sticking, allow food to cook 1-2 minutes longer. Cover with lid and turn the valve to the Steam-Seal® (A) position. Reduce heat to medium-low. This will create the steam seal. Do not remove lid during cooking as it will cause heat and moisture to escape. See cooking guide below. A. Meats and Proteins Sear with lid off Cooking time after adding Steam-Seal® lid Sirloin Steaks – 6 oz. 1⁄2" thick 4-5 minutes, then turn to cook other side. Place valve in the Steam-Seal® position and cook 4-5 more minutes at medium low to low heat for medium-rare steaks. Chicken Breasts – 6 oz. 1⁄2" thick 4-5 minutes, then turn to cook other side. Place valve in the Steam-Seal® position and cook 6-8 more minutes at medium low to low heat. Larger portions of chicken will take longer. Pork Chops – 1" thick 4-5 minutes, then turn to cook other side. Place valve in the Steam-Seal® position and cook 4-5 minutes more at medium low to low heat. Larger portions of pork will take longer. GREASELESS COOKING OF FISH Vida Sana® Cookware allows you to steam-cook white fish or sear oily fish with no added fats. However, a small amount of liquid is needed to create steam. Preheat your Vida Sana® Cookware empty over medium-high heat for 3-5 minutes without lid. Add a few droplets of water to test if it’s ready for food. If the water sizzles and evaporates, allow the cookware to heat a little longer. If the water beads dance across the surface, then it is ready for food. Add fish and pour 1⁄2 cup of liquid, like lemon or orange juice, over fish. No added oils or fats are needed. Cover the pan with lid, turn the valve to the Steam-Seal® (A) position and reduce heat to medium low to low. This will create the steam seal. Do not remove lid during cooking as it will cause heat and moisture to escape. (See guide on next page.) A. 7 Fish Liquids Cooking time after adding Steam-Seal® lid and Liquids Salmon, Tuna – 6 oz. portions 1⁄2 cup juice, broth or wine Place valve in Steam-Seal® position and cook 3-5 minutes at medium low to low heat. Cod, Tilapia, Hake – 6 oz. portions 1⁄2 cup juice, broth or wine Place valve in Steam-Seal® position and cook 3-5 minutes at medium low to low heat. COOKING RICE Bring water to a boil using the Nutri-Steam Valve® in the Steam Whistle position (A) at medium heat. When cookware has reached the proper cooking temperature, the whistle will sound. Remove lid, add rice and stir. Reduce heat and turn valve to the Steam-Seal® position (B) and simmer. A. B. Rice Liquids Cooking time after adding Steam-Seal® lid and Liquids White, 2 cups 4 cups water Reduce heat to low, place valve in the Steam-Seal® position, cook for 13-15 minutes. Brown, 2 cups 4 cups water Reduce heat to low, place valve in the Steam-Seal® position, cook for 30-35 minutes. TRADITIONAL COOKING A. B. OVEN COOKING Vida Sana® Cookware is a flexible cookware system that allows you to select how you want to cook foods. For traditional cooking methods that require cooking with liquids or oils/fats and a lid, start cooking with the Nutri-Steam Valve® in the Steam Whistle position (A) and cook at medium heat. When cookware has reached the proper cooking temperature, the whistle will sound. Turn the Nutri-Steam Valve® 2 clicks to the right to the Steam-Release position (B). This will allow steam to gradually escape during the cooking process. This is ideal when cooking soups, stews, broth, and sauces that will simmer for longer periods of time. Your Vida Sana® Cookware is oven safe up to 350°F with glass lids. Without lids, cookware can go up to 450°F in the oven. Cookware can also be used in the broiler without lids. Your cookware is NOT safe for microwave use. Handles, knob, and valve will become hot during use, or when baking in the oven. Always use potholders or mitts when handling hot cookware. Go to princesshouse.com/Vida-Sana-cookware to search for additional easy and healthy Vida Sana® recipes. 8 CARING FOR YOUR VIDA SANA® COOKWARE COOKWARE VESSEL Vida Sana® Cookware can be washed by hand or placed in the dishwasher. Wash in hot soapy water, rinse and dry immediately to avoid any water spots. We recommend using our Princess House® Specialty Microfiber Non-Scratch Sponge or a non-abrasive sponge or pad to remove any stuck-on foods, and our Towel to dry. To remove any starch stains or discolorations from the interior or exterior of your cookware, we recommend using our Princess House® Earth Friendly Stainless Steel Cookware cleaner. Follow directions on the label. Cookware can discolor or stain permanently if not properly cleaned before cooking each time. Never use harsh or abrasive cleaners, sponges or pads as they can scratch or harm surfaces. STEAM-SEAL® LID Steam-Seal® lids should be washed by hand. Wash in hot soapy water, rinse and dry immediately to avoid any water spots. Placing lid in the dishwasher may discolor the valve over time. We recommend using our Princess House® Specialty Microfiber Non-Scratch Sponge or a non-abrasive sponge or pad to remove any stuck-on foods. NUTRI-STEAM VALVE® The Nutri-Steam Valve® requires no additional cleaning. If it doesn’t whistle it may have trapped food residue, you can disassemble the valve as shown. Simply hold the valve cap on the top of the lid and turn the valve ring on the underside of the lid to disassemble. Unscrew all the components (see illustration) and thoroughly hand wash in hot soapy water. Rinse and allow to dry before re-assembling. To re-assemble the components follow the illustration below. Make sure to align the top portion of the valve as shown to ensure the valve settings are in the correct location next time you cook. Valve Cap Valve Ring Valve Collar 9 10 TROUBLE SHOOTING GUIDE There is steam escaping from the side of my lid when in the Steam-Seal® position. We suggest that you rotate or spin the lid gently to create a better seal between lid and pan. You can also try to reduce the heat, this will help to maintain an even amount of steam and moisture inside the pan while cooking. There is steam escaping from the valve when using it in the Steam-Seal® position. Cooking at too high a temperature will cause liquids to evaporate fast, and steam will try to escape even with the valve closed. Reduce heat, this will help to maintain an even amount of steam and moisture inside the pan while cooking. If your valve still does not work properly, please see below for valve replacement information. Why are there water droplets around the valve? The steam coming out of the valve might disperse some droplets of hot water. Cooking at too high a temperature will cause liquids to evaporate fast, and water droplets to stay around the valve. We recommend using medium low heat. Do not place your hands directly in front of the steam, and make sure it is not directed towards anything that can be damaged by the heat. Use the wings to move valve safely to the indicated position for cooking. See page 5 for valve positions. Why doesn’t my Nutri-Steam Valve® whistle anymore? Food residue may be trapped in the valve. Turn the valve to the Steam Whistle setting and allow hot water to flow through. Allow to dry naturally. If the valve still doesn’t whistle, you can disassemble the valve for a deeper cleaning. Simply hold the valve cap on the top of the lid and turn the valve ring on the underside of the lid to disassemble. Unscrew all the components and thoroughly handwash in hot soapy water. Rinse and allow to dry before re-assembling. See page 9 for instructions. How do I replace my Nutri-Steam Valve® after the warranty expires? Your Nutri-Steam Valve® will be replaced at no cost. Please contact Customer Service for a replacement. Why don’t I have any water left? Cooking at too high a temperature will cause liquids to evaporate fast, we recommend using medium low heat. Valve needs to be set in the Steam-Seal® position to keep steam inside the pan and avoid evaporation. Also, you may need to add more liquids depending of the amount of food being cooked. See pages 6, 7 and 8 for suggestions. Why has my food stuck? There might not have been enough water when cooking vegetables. Heat may have been too high and water evaporated too quickly. See page 6 for Cooking Tips chart and recommended cooking times. If meat is stuck to the pan, the surface may have not been hot enough. See page 7 for Cooking Tips chart and recommended cooking times. If fish is stuck to the pan, there might not have been enough liquid. See page 7 for Cooking Tips chart and recommended cooking times. Can I store food in my cookware? No! Never leave food in cookware for long periods of time or store food in cookware. Salty or highly acidic foods like sauces, soups, salsas and stews may cause staining or pitting. Why has the bottom of my cookware turned bronze? Cooking at too high a temperature or allowing a pan to boil dry will cause bronze, blue or rainbow tints on the outside of your stainless steel cookware. These conditions are not harmful and can be removed with Princess House® Earth Friendly Stainless Steel Cookware Cleaner. Follow directions on label. Why does the inside of my pan have white spots? Salt that has not dissolved in cooking can cause white spots or pits on the inside bottom of your cookware. Pits, as well as some white spots, cannot be removed and do not affect the performance of the cookware. These conditions are not defects. To avoid spots or pits, add salt only after water has come to a boil or food has reached cooking temperature and never leave food in cookware for long periods of time or store food in cookware. Salty or highly acidic foods like sauces, soups and stews may cause staining or pitting. Why does my pan have a white film? Minerals in water and starches in foods like potatoes and rice can leave a white film on stainless steel. These can be easily removed with Princess House® Earth Friendly Stainless Steel Cookware Cleaner. Follow directions on the label. Dry cookware immediately after washing. These conditions are not defects. How do I remove water spots from my cookware? Water spots may occur due to the water conditions in the area where you live. To prevent spots, always rinse cookware with hot water and dry immediately after washing. If water spots appear, use Princess House® Earth Friendly Stainless Steel Cookware Cleaner to remove. Follow instructions on label. These conditions are not defects. How do I remove food from glass lids? Fill your pan half full with water, place on stove with lid on and bring to a boil for a few minutes. Allow water to cool and wash as you normally would. You may also use a soft bristle toothbrush to remove any food particles stuck between the lid and stainless steel rim. Placing in the dishwasher will also help remove food from lid. How do I remove burned-on grease and food? We recommend using Princess House® Earth Friendly Stainless Steel Cookware Cleaner. Add a small amount to the surface of your pan and rub in a circular motion with the microfiber side of the Princess House® Specialty Non-Scratch Sponge or a sponge or soft cloth. Follow by rinsing in warm, soapy water and drying thoroughly. You may also try filling your pan half full with water, placing it on the stove and bringing to a boil for a few minutes. Allow water to cool and wash pan as you normally would using Princess House® Earth Friendly Stainless Steel Cookware Cleaner. 11 PRECAUTIONS Do I need to use potholders? Yes! The handles on your cookware and lids and the Nutri-Steam Valve® may become hot when cooking. Make sure to use potholders when lifting lids or moving cookware from stove or oven. What safety precautions should I take with my glass lids? Do not immerse hot lid in water. Always allow lid to cool before washing. Never handle hot lid with a wet cloth or place lid directly on a hot surface. Avoid impact with hard objects. Do not use the lid if chipped, cracked or noticeably scratched, as these conditions may cause glass to shatter. CAUTION: DO NOT LET ANY COOKWARE BOIL DRY OR ALLOW DRY COOKWARE TO REMAIN ON A HOT ELECTRIC UNIT, CERAMIC OR GAS BURNER.
