Description: Tosa Japanese kitchen santoku knife. Hand forged. This all purpose knife has a hand forged blade made of aogami no. 1 (blue) steel so it will maintain a sharp edge. This Tosa santoku knife comes from the Kochi prefecture (formerly the Tosa province) where swords and kitchen cutlery have been hammer forged (handmade) for centuries. Tosa blacksmiths are widely known for their cutlery and tools. New old stock that was in long term warehouse storage in Japan so may have minimal scratches (see photos). It was in long term storage and never received the makers engraving. Japanese hand forged knives like this will rust, so the cutting edge must be dried after using before storing.
