Call this "Original Gravity" or "OG". This first reading shows the potential alcohol that can be got from your juice if all the sugar is fermented out. When you think fermentation may be finished, take another reading and subtract THIS reading it from the OG reading. The difference is exactly how much % alcohol you ended up with. If you want to go over 14%, get it up to 12-14% and then add sugar to make up the additional alcohol. Do not add sugar that would result in more than 14% alcohol right at the beginning. Wait until some of the sugar has been consumed and 'feed' more sugar after some has been converted to alcohol. This will prevent your yeast from getting sugar psychosis, a stuck or slow fermentation condition in which the yeasties are essentially full of turkey dinner and don't want to work or even get up from the couch for that matter.
