SPECIFICS: The Pasilla is a narrow dried chile that before drying was called a chilaca pepper. It grows 8" - 10" long and 1" - 1 1/2" wide. It starts out dark green and ends up dark brown. Pasilla chile is smoky, fruity and earthy with cocoa overtones. It is often compared to berries and raisins. Pasilla means "little raisin" in Spanish owing to the chiles brown pods and raisin like aroma. In western Mexico the Pasilla is called Chile Negro. A Pasilla is similar in flavor to Anchos but are less sweet. Pasillas are not particularly pungent. They measures between 1000 - 1500 Scoville Heat Units.USES: The Pasilla is mainly used in the dry pod or powder form. It is popular in Mexican cooking especially for sauces like moles, adobo sauce, salsa and enchilada sauce. It adds an interesting taste and color to standard red Chile enchilada sauce. It has a meaty texture and will thicken sauces, stews and salsas very well. Also use as a seasoning in soups, stews, tortilla soup, cream sauces, tacos, quesadillas, and tostadas.
