The purpose of this book is to acquaint the student with the fundamental problems and essential general concepts of livestock production and marketing in the United States. Frequent revisions have been necessary to keep abreast of the changing times, and we have attempted to include the major changes in the entire field in this revised edition. The period between the last two agricultural censuses is referred to as the five-year period of the greatest change in farms and agriculture in our history. During that time, animal husbandry has changed markedly; it is now commonly designated as animal science. This is in keeping with the present-day application of science and technology to livestock production and marketing. The content is somewhat comprehensive, yet it is arranged and presented to meet the needs of beginning students at the college level. We have tried to make available to the reader much factual information from various sources and draw together many of the basic facts of livestock production known by producers and scientists. The book is designed primarily for use as a text for college students, however the subject matter is presented so as to be useful in teaching vocational agriculture, particularly as a reference text. Although we have tried to make this edition as up to date as possible, we should point out that the subject matter is not static. In the livestock field, as in other fields, readjustment must constantly be made to meet changing conditions. Our agriculture, and consequently animal science, has been changed by group action and other forces. Science, greater specializa-tion, readjustment to foreign relationships, and our changing diet have very directly affected livestock raising. Perhaps more evident is the effect of farm mechanization upon agriculture in general-and livestock in particular. Equally striking have been the changes in our marketing of livestock and the merchandising of meat, milk, vi PREFACE wool, and other animal products. Currently available data such as outlook reports, market reports, and reviews may be used to provide an interesting approach to many of the sections. The material included is that which has been quite definitely accepted. This is mainly a survey of animal science and marketing. Some controversial issues are discussed; it was our intention to present the available facts on such subjects. Generally, we omitted theories which still are unproved. Each part is devoted to one kind of livestock and includes chapters or parts of chapters dealing with types, markets, market classifications, prices, feeding, management, and breeding. Rather specialized chapters in each part cover the processing and distribution of the animal products or other special considerations, such as wool of sheep, milk secretion of dairy cows, and so on. The order of presentation is based on several years of teaching experience in this field; however, the various parts are so written and cross-refer-enced that the order can be changed to suit the convenience of the instructor. It seems logical to begin discussion of each kind of livestock with its place in farming and ranching; then to follow with market requirement, marketing methods, processing, and merchandising; and to close with feeding, man-agement, and breeding. The material on feeding and breeding is quite gen-eral. References on these and other subjects are suggested at appropriate places, and a list of reference books is included at the end of the text. The published material on animal science was drawn on freely in compiling and writing this book. Much material was drawn from various sources at Iowa State University, and the United States Department of Agriculture and various agricultural colleges and experimental stations very kindly supplied subject matter and illustrative material requested. For all this and for the many pictures loaned for use as illustrations the writers are deeply indebted. Credit is given for the material as it appears-however, special mention should be made of the following who supplied photographs used as illustrations: Livestock Photo Company; Abernathy; Harlan Moore; Wide World; and Bob Leu of Horse World magazine. Professor James J. Kiser has joined with the original author in the preparation of the manuscript of this revised edition. His wide experience in the livestock field as a farmer, student, and instructor has made him well suited for the task. He has added material to the subject matter and its presentation. We join in expressing appreciation to our wives, Muriel H. Anderson and Elizabeth Kiser, for their encouragement and help in the preparation of the revision. We also acknowledge, with thanks, the assistance of Marilyn Lovett Sponsler in reviewing the entire manuscript. Through long association with his co-workers at Iowa State University, Professor Anderson has acquired many ideas and judgments included in this book.
