This is a Deba knife made of SK carbon steel, manufactured in Sanjo, one of the leading cutlery manufacturing areas in Japan. Regarding the blade pattern, since it is printed, it will eventually fade away. Depending on how you sharpen it with a whetstone, it may disappear sooner. However, if you sharpen it at a shallow angle with a whetstone until the pattern fades, you can enjoy its wonderful sharpness. Please take a look at the last three photos. This is Urasuki. Urasuki is the concave surface on the backside of the blade that creates an air pocket when the blade is slicing through food. This helps to reduce drag and creates a smoother surface, so you can make faster, nicer cuts. By the way, Urasuki is often found on traditional Japanese single-edged knives (e.g. Yanagiba knives, Deba knives, and Usuba knives). Note, however, that some brands and models have recently omitted this special process. ・What is the meaning of the characters engraved on the blades? The blade's right side is engraved with five characters. The first two signify 'registered,' the next two represent the name 'Teruhide' for this knife, and the last one means 'work.' By the way, the characters written on the handle's sticker convey the same meaning. ・What is Sanjo Shimomura? This company was established in 1874 in Sanjo City, Niigata Prefecture.
