Quick growing roots reach 3 -4 feet and can be harvested in about 4 - 5 months when planted in the spring. Winter hardy Biennial. Popular sweet root vegetable in China as well. Flowers are a wonderful attractant for Butterflies and Bees. Flowering stems are edible with a similar taste to its cousin; Artichoke and Asparagus. Pealed leaf stalks can be used as a Cardoon substitute. Young tender roots can be eaten like celery or used in salads when cut. Mature roots can be cooked like carrots in stir fries and soups or can be roasted and pickled. Medicinal: a blood purifier, detoxicant, used in treating skin disorders, and kidney stones. Has been also used by the Ojibwa tribe in Essiac tea for the treatment of some Cancers. Other parts used to prevent Baldness. rheumatoid arthritis, acne, skin infections, eczema, boils, bites, impetigo, herpes, sore throat, rashes, ringworm, poison ivy/oak, and as a tonic.
